Description

Easy Greek Chicken Bowls are a healthy, flavorful meal packed with marinated grilled chicken, fresh veggies, rice, and a tangy tzatziki sauce. Perfect for meal prep or a quick weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked white or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup kalamata olives, sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  2. Grill or cook chicken over medium heat for 5-6 minutes per side until fully cooked. Let rest, then slice.
  3. Prepare bowls with a base of rice.
  4. Top each bowl with grilled chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  5. Add a dollop of tzatziki sauce and garnish with fresh parsley.
