Description

These easy glazed lemon cookies are soft, chewy, and bursting with fresh lemon flavor, topped with a sweet and tangy lemon glaze.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg, lemon zest, lemon juice, and vanilla extract. Mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  5. Scoop tablespoon-sized amounts of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10–12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
  7. While the cookies cool, prepare the glaze by mixing the powdered sugar and lemon juice until smooth.
  8. Drizzle or spread the glaze over the cooled cookies and allow it to set before serving.

Notes

  • Store cookies in an airtight container at room temperature for up to 5 days.
  • For extra lemon flavor, add a bit more lemon zest to the glaze.
  • You can chill the dough for 30 minutes to help control spreading during baking.
