  • 6 cups beef broth
  • 1/2 cup dry white wine (optional)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

For Serving:

  • 1 baguette, sliced
  • 2 cups shredded Gruyère cheese
  • nonstick cooking spray (for broiling)

Instructions

  1. Sauté Onions: In a large pot, melt butter with olive oil over medium heat. Add onions, sugar, salt, and pepper. Cook until caramelized.
  2. Add Ingredients: Sprinkle in flour, then pour in broth and wine. Add Worcestershire sauce and thyme. Simmer for 15–20 minutes.
  3. Prepare Baguette: Toast baguette slices under the broiler until golden.
  4. Serve: Ladle soup into bowls, top with a baguette slice and Gruyère. Broil until cheese is melted and bubbly. Serve hot.

Notes

  • If you don’t have broiler-safe bowls, toast the bread with cheese separately and place on top of the soup before serving.
  • For a vegetarian version, use vegetable broth instead of beef.
