Description

Easy Cucumber Salad is a crisp, tangy, and refreshing summer side dish made with cucumbers, onions, and a simple vinegar dressing.

Ingredients

  • cucumbers
  • red onion
  • white vinegar
  • water
  • granulated sugar
  • salt
  • black pepper
  • fresh dill (optional)

Instructions

  1. Thinly slice the cucumbers and red onion using a sharp knife or mandoline.
  2. In a large bowl, combine vinegar, water, sugar, salt, and pepper. Stir until the sugar dissolves completely.
  3. Add the sliced cucumbers and onions to the bowl and toss to coat evenly.
  4. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  5. Garnish with chopped fresh dill before serving if desired.

Notes

  • Use apple cider vinegar for a milder tang.
  • Add sliced cherry tomatoes or radishes for extra color and flavor.
  • Incorporate a bit of sour cream or Greek yogurt for a creamy version.
  • Sprinkle in some chili flakes for a spicy kick.
  • Store in an airtight container in the refrigerator for up to 3 days.
  • Do not freeze; cucumbers will lose their texture.
  • Best served chilled; no reheating needed.
  • English cucumbers work well and don’t need to be peeled.
  • Minced garlic can be added for extra flavor.
  • Salting cucumbers beforehand is optional.
