Description
Easy Cucumber Salad is a crisp, tangy, and refreshing summer side dish made with cucumbers, onions, and a simple vinegar dressing.
Ingredients
- cucumbers
- red onion
- white vinegar
- water
- granulated sugar
- salt
- black pepper
- fresh dill (optional)
Instructions
- Thinly slice the cucumbers and red onion using a sharp knife or mandoline.
- In a large bowl, combine vinegar, water, sugar, salt, and pepper. Stir until the sugar dissolves completely.
- Add the sliced cucumbers and onions to the bowl and toss to coat evenly.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- Garnish with chopped fresh dill before serving if desired.
Notes
- Use apple cider vinegar for a milder tang.
- Add sliced cherry tomatoes or radishes for extra color and flavor.
- Incorporate a bit of sour cream or Greek yogurt for a creamy version.
- Sprinkle in some chili flakes for a spicy kick.
- Store in an airtight container in the refrigerator for up to 3 days.
- Do not freeze; cucumbers will lose their texture.
- Best served chilled; no reheating needed.
- English cucumbers work well and don’t need to be peeled.
- Minced garlic can be added for extra flavor.
- Salting cucumbers beforehand is optional.
