Description

This Banana Bread Pudding is a cozy, comforting dessert made with ripe bananas, soft bread, and a creamy custard. It’s baked until golden and served warm, often topped with a drizzle of caramel sauce or a scoop of vanilla ice cream. It’s the perfect way to use up overripe bananas or leftover bread.


Ingredients

  • 4 cups cubed day-old bread (like brioche or French bread)

  • 2 ripe bananas, mashed

  • 2 cups whole milk

  • 3 large eggs

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg (optional)

  • 1/4 tsp salt

  • 2 tbsp unsalted butter, melted

Optional toppings:

  • Caramel sauce

  • Whipped cream

  • Chopped nuts

  • Vanilla ice cream


Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.

  2. In a large bowl, whisk together the milk, eggs, mashed bananas, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and salt.

  3. Add the bread cubes to the bowl and gently stir to coat. Let the mixture sit for about 10 minutes so the bread can soak up the custard.

  4. Pour the mixture into the prepared baking dish and drizzle the melted butter on top.

  5. Bake for 45–50 minutes, or until the top is golden and the center is set.

  6. Let cool slightly before serving. Serve warm with your favorite toppings.


Notes

  • Use very ripe bananas for the best flavor.

  • If your bread is fresh, you can dry it out by baking the cubes at 300°F for 10 minutes before using.

  • This can be made ahead and reheated — it’s even better the next day!
