Description
This Banana Bread Pudding is a cozy, comforting dessert made with ripe bananas, soft bread, and a creamy custard. It’s baked until golden and served warm, often topped with a drizzle of caramel sauce or a scoop of vanilla ice cream. It’s the perfect way to use up overripe bananas or leftover bread.
Ingredients
-
4 cups cubed day-old bread (like brioche or French bread)
-
2 ripe bananas, mashed
-
2 cups whole milk
-
3 large eggs
-
1/2 cup granulated sugar
-
1/4 cup brown sugar
-
1 tsp vanilla extract
-
1/2 tsp ground cinnamon
-
1/4 tsp ground nutmeg (optional)
-
1/4 tsp salt
-
2 tbsp unsalted butter, melted
Optional toppings:
-
Caramel sauce
-
Whipped cream
-
Chopped nuts
-
Vanilla ice cream
Instructions
-
Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
-
In a large bowl, whisk together the milk, eggs, mashed bananas, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and salt.
-
Add the bread cubes to the bowl and gently stir to coat. Let the mixture sit for about 10 minutes so the bread can soak up the custard.
-
Pour the mixture into the prepared baking dish and drizzle the melted butter on top.
-
Bake for 45–50 minutes, or until the top is golden and the center is set.
-
Let cool slightly before serving. Serve warm with your favorite toppings.
Notes
-
Use very ripe bananas for the best flavor.
-
If your bread is fresh, you can dry it out by baking the cubes at 300°F for 10 minutes before using.
-
This can be made ahead and reheated — it’s even better the next day!
