- 1 cup plain Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon honey (optional)
- Salt and black pepper, to taste
- 1 tablespoon chopped fresh dill or parsley (optional)
Instructions
- In a medium bowl, combine the Greek yogurt, olive oil, lemon juice, red wine vinegar, and Dijon mustard.
- Add the minced garlic and honey, if using.
- Whisk the mixture until smooth and well combined.
- Season with salt and black pepper to taste.
- Stir in chopped fresh herbs if desired.
- Transfer to a jar or airtight container and refrigerate for at least 15 minutes before serving.
Notes
- This dressing can be stored in the refrigerator for up to one week.
- Adjust consistency by adding a little water or more olive oil if needed.
- Great as a dip or sandwich spread as well.
