Description

This Easy Coconut Chia Pudding, inspired by the flavors of Raffaello candies, is a creamy, tropical treat made with coconut milk, shredded coconut, and chia seeds. It’s perfect for a healthy breakfast, snack, or light dessert.

Ingredients

Units Scale
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey
  • 1/4 teaspoon vanilla extract
  • 1/4 cup shredded coconut (plus extra for topping)
  • Pinch of salt
  • Optional: chopped almonds or Raffaello candies for garnish

Instructions

  1. In a mixing bowl, combine the coconut milk, chia seeds, maple syrup (or honey), vanilla extract, shredded coconut, and a pinch of salt.
  2. Whisk well to ensure the chia seeds are evenly distributed.
  3. Let the mixture sit for about 10 minutes, then whisk again to prevent clumping.
  4. Cover the bowl or transfer the mixture to individual jars and refrigerate for at least 2 hours or overnight until it thickens.
  5. Before serving, stir the pudding and top with extra shredded coconut and optional chopped almonds or crushed Raffaello candies.
  6. Serve chilled and enjoy!

Notes

  • Use canned full-fat coconut milk for the creamiest texture.
  • You can adjust the sweetness to your preference.
  • Add a scoop of protein powder for a more filling version.
  • Stores well in the refrigerator for up to 4 days.
