Instructions
- In a mixing bowl, combine the coconut milk, chia seeds, maple syrup (or honey), vanilla extract, shredded coconut, and a pinch of salt.
- Whisk well to ensure the chia seeds are evenly distributed.
- Let the mixture sit for about 10 minutes, then whisk again to prevent clumping.
- Cover the bowl or transfer the mixture to individual jars and refrigerate for at least 2 hours or overnight until it thickens.
- Before serving, stir the pudding and top with extra shredded coconut and optional chopped almonds or crushed Raffaello candies.
