Description

This easy Coconut Chia Pudding recipe is inspired by Raffaello candies, combining creamy coconut milk, chia seeds, and a hint of sweetness for a healthy, indulgent treat.


Ingredients

  • 1 cup canned coconut milk (full fat)
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded coconut (plus more for topping)
  • Optional: chopped almonds or whole almonds for topping

Instructions

  1. In a medium bowl, whisk together the coconut milk, almond milk, maple syrup (or honey), and vanilla extract.
  2. Add chia seeds and shredded coconut, stirring well to combine.
  3. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  4. Cover and refrigerate for at least 2 hours or overnight until thickened.
  5. Before serving, stir well and top with extra shredded coconut and optional almonds.
  6. Serve chilled and enjoy!
