- 3–4 pounds chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, chopped
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- Preheat oven to 325°F (163°C).
- Season the chuck roast with salt, pepper, thyme, and rosemary.
- Heat olive oil in a large pot over medium-high heat.
- Sear the roast on all sides until browned.
- Remove roast and sauté onions and garlic until fragrant.
- Return roast to the pot and add beef broth.
- Add carrots and potatoes around the roast.
- Cover and cook in the preheated oven for 3-4 hours, until tender.
- Let rest for 10 minutes before slicing and serving.
Notes
- Use a heavy-duty pot or Dutch oven for best results.
- You can add other vegetables like celery or parsnips.
- Leftovers make great sandwiches the next day.
