Description

A simple and hearty chuck roast recipe that’s perfect for a comforting family dinner.


Ingredients

  • 34 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season the chuck roast with salt, pepper, thyme, and rosemary.
  3. Heat olive oil in a large pot over medium-high heat.
  4. Sear the roast on all sides until browned.
  5. Remove roast and sauté onions and garlic until fragrant.
  6. Return roast to the pot and add beef broth.
  7. Add carrots and potatoes around the roast.
  8. Cover and cook in the preheated oven for 3-4 hours, until tender.
  9. Let rest for 10 minutes before slicing and serving.

Notes

  • Use a heavy-duty pot or Dutch oven for best results.
  • You can add other vegetables like celery or parsnips.
  • Leftovers make great sandwiches the next day.
