Description

This Easy Chicken Noodle Casserole is the ultimate comfort food, combining tender chicken, egg noodles, and a creamy sauce all baked to perfection. Great for weeknights or family gatherings.


Ingredients

  • 3 cups cooked chicken, shredded
  • 8 oz egg noodles
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup frozen peas and carrots
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup crushed buttery crackers (optional topping)
  • 2 tbsp melted butter (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook egg noodles according to package instructions; drain and set aside.
  3. In a large mixing bowl, combine cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
  4. Add the cooked chicken, cooked noodles, frozen peas and carrots, and shredded cheddar cheese to the bowl. Mix until well combined.
  5. Transfer the mixture into a greased 9×13 inch baking dish.
  6. In a small bowl, mix crushed crackers with melted butter and sprinkle over the casserole (optional).
  7. Bake for 25-30 minutes, or until hot and bubbly and the topping is golden brown.
  8. Let it cool slightly before serving.

Notes

  • Rotisserie chicken works great for this recipe.
  • You can substitute cream of chicken soup with cream of mushroom or celery.
  • Add other vegetables like corn or green beans if desired.
