Description

A delicious and easy Southern classic, this Pineapple Casserole combines sweet pineapple with savory cheese and buttery crackers for a unique and comforting side dish.


Ingredients

  • 6 tablespoons all-purpose flour
  • 2 cans (20 oz each) pineapple chunks, drained
  • 2 cups shredded sharp cheddar cheese
  • 1 sleeve Ritz crackers, crushed
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine sugar and flour.
  3. Add drained pineapple chunks to the sugar mixture and stir to coat evenly.
  4. Gently fold in the shredded cheddar cheese.
  5. Pour the pineapple and cheese mixture into a greased 9×13-inch baking dish.
  6. In a separate bowl, mix crushed Ritz crackers with melted butter.
  7. Sprinkle the buttery cracker mixture evenly over the pineapple mixture.
