Easy Cheesy Potatoes are a creamy, comforting side dish made with tender potatoes, rich cheese, and a few pantry staples. Perfect for potlucks or family dinners.

- 6 cups diced potatoes (peeled and parboiled)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup chopped onion
- 1/4 cup melted butter
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1/2 cup crushed cornflakes or breadcrumbs (optional topping)
- 2 tbsp melted butter (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large bowl, mix together sour cream, cream of chicken soup, melted butter, chopped onion, garlic powder, salt, and pepper.
- Fold in the parboiled diced potatoes and 1.5 cups of shredded cheddar cheese.
- Spread the mixture evenly in the prepared baking dish.
- Top with the remaining 0.5 cup of cheddar cheese.
- If using, mix crushed cornflakes or breadcrumbs with 2 tbsp melted butter and sprinkle over the top.
- Bake for 45-50 minutes or until hot and bubbly with a golden top.
- Let cool slightly before serving.
Notes
- For extra flavor, add cooked and crumbled bacon or diced ham.
- You can use frozen hash browns instead of fresh potatoes to save time.
- Substitute cream of mushroom soup for a vegetarian version.
