Description

Easy Cheesy Potatoes are a creamy, comforting side dish made with tender potatoes, rich cheese, and a few pantry staples. Perfect for potlucks or family dinners.


Ingredients

  • 6 cups diced potatoes (peeled and parboiled)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup chopped onion
  • 1/4 cup melted butter
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup crushed cornflakes or breadcrumbs (optional topping)
  • 2 tbsp melted butter (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, mix together sour cream, cream of chicken soup, melted butter, chopped onion, garlic powder, salt, and pepper.
  3. Fold in the parboiled diced potatoes and 1.5 cups of shredded cheddar cheese.
  4. Spread the mixture evenly in the prepared baking dish.
  5. Top with the remaining 0.5 cup of cheddar cheese.
  6. If using, mix crushed cornflakes or breadcrumbs with 2 tbsp melted butter and sprinkle over the top.
  7. Bake for 45-50 minutes or until hot and bubbly with a golden top.
  8. Let cool slightly before serving.

Notes

  • For extra flavor, add cooked and crumbled bacon or diced ham.
  • You can use frozen hash browns instead of fresh potatoes to save time.
  • Substitute cream of mushroom soup for a vegetarian version.
