Ingredients
- 2 chicken breasts
- 1/4 cup buffalo sauce
- 1 cup cooked rice
- 1/2 cup shredded lettuce
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced red onion
- 1/4 cup shredded cheddar cheese
- 1/4 cup blue cheese crumbles (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper.
- Cook the chicken for 6-7 minutes per side until cooked through and golden brown. Remove from heat and let rest.
- Shred the cooked chicken using two forks.
- In the same skillet, add buffalo sauce and shredded chicken. Toss to coat the chicken in the sauce.
- While the chicken is cooking with the sauce, prepare the bowls. Layer each bowl with rice, shredded lettuce, tomatoes, and red onion.
- Top each bowl with the buffalo chicken mixture, followed by cheddar cheese and blue cheese (if using).
- Serve immediately, garnished with additional buffalo sauce or ranch if desired.
