Description

A quick and delicious Buffalo Chicken Bowl recipe made in 30 minutes. Perfect for a hearty lunch or dinner, featuring tender chicken, spicy buffalo sauce, and fresh veggies over rice.


Ingredients

  • 2 chicken breasts
  • 1/4 cup buffalo sauce
  • 1 cup cooked rice
  • 1/2 cup shredded lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced red onion
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup blue cheese crumbles (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper.
  2. Cook the chicken for 6-7 minutes per side until cooked through and golden brown. Remove from heat and let rest.
  3. Shred the cooked chicken using two forks.
  4. In the same skillet, add buffalo sauce and shredded chicken. Toss to coat the chicken in the sauce.
  5. While the chicken is cooking with the sauce, prepare the bowls. Layer each bowl with rice, shredded lettuce, tomatoes, and red onion.
  6. Top each bowl with the buffalo chicken mixture, followed by cheddar cheese and blue cheese (if using).
  7. Serve immediately, garnished with additional buffalo sauce or ranch if desired.
