Description

A hearty, make-ahead casserole layered with eggs, sausage, cheese, and bread. Perfect for busy mornings or brunch gatherings.


Ingredients

  • 1 pound breakfast sausage
  • 2 cups shredded cheddar cheese
  • 2 cups whole milk
  • 6 slices white or sourdough bread, cubed
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Butter (for greasing)
  • Optional: 1/2 cup chopped bell peppers
  • Optional: 1/2 cup chopped spinach
  • Optional: 1/2 cup chopped mushrooms
  • Optional: 1/4 cup chopped green onions

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain excess grease.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
  4. Cut bread into cubes and spread evenly in the prepared baking dish.
  5. Layer cooked sausage over bread, then sprinkle shredded cheese on top.
  6. Pour egg mixture evenly over all ingredients in the dish.
  7. Let casserole sit for 15 minutes or refrigerate overnight.
  8. Bake uncovered for 40-45 minutes until center is set and top is golden brown.
  9. Cool slightly before slicing and serving.
