Description

A rustic American dessert with spiced apples and a buttery, golden crust that’s broken up during baking to let juices caramelize into the topping.


Ingredients

  • 68 apples, peeled, cored, and sliced (suggest Granny Smith and Honeycrisp)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter
  • 1 sheet puff pastry or equivalent pie dough
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss sliced apples with brown sugar, sugar, cinnamon, nutmeg, cloves, salt, and lemon juice until evenly coated.
  3. Melt butter in a cast iron skillet or oven-safe pan over medium heat. Add the apple mixture and cook for about 5-7 minutes, until the apples begin to soften and release juices.
  4. Roll out the puff pastry or pie dough and place it over the apples, trimming any excess. Tuck the edges slightly into the skillet.
  5. Brush the top of the crust with egg wash.
  6. Bake for 25 minutes, then carefully remove the pan and use a spoon to press and break up the crust slightly into the apple filling. This helps the juices soak through.
  7. Return to the oven and bake for another 15-20 minutes, until the crust is golden brown and the filling is bubbly.
  8. Let cool for a few minutes before serving.
