Description

This easy and flavorful mushroom chicken recipe features tender chicken breasts smothered in a rich, creamy mushroom sauce, perfect for a weeknight dinner or cozy weekend meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cups sliced mushrooms (button or cremini)
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 5–6 minutes per side, or until golden and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium and add butter. Once melted, add the mushrooms and cook for 5–6 minutes, stirring occasionally, until browned and tender.
  4. Add the minced garlic and dried thyme; cook for another 1–2 minutes until fragrant.
  5. Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
  6. Stir in the heavy cream and Parmesan cheese. Simmer for 3–4 minutes until the sauce thickens slightly.
  7. Return the cooked chicken breasts to the skillet and spoon sauce over them. Simmer for an additional 2–3 minutes to reheat the chicken and meld flavors.
  8. Garnish with fresh parsley and serve hot.

Notes

  • You can use chicken thighs instead of breasts for a juicier texture.
  • Add a splash of white wine for extra flavor when deglazing the pan.
  • Serve with mashed potatoes, rice, or crusty bread for a complete meal.
