- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cups sliced mushrooms (button or cremini)
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 5–6 minutes per side, or until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium and add butter. Once melted, add the mushrooms and cook for 5–6 minutes, stirring occasionally, until browned and tender.
- Add the minced garlic and dried thyme; cook for another 1–2 minutes until fragrant.
- Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and Parmesan cheese. Simmer for 3–4 minutes until the sauce thickens slightly.
- Return the cooked chicken breasts to the skillet and spoon sauce over them. Simmer for an additional 2–3 minutes to reheat the chicken and meld flavors.
- Garnish with fresh parsley and serve hot.
Notes
- You can use chicken thighs instead of breasts for a juicier texture.
- Add a splash of white wine for extra flavor when deglazing the pan.
- Serve with mashed potatoes, rice, or crusty bread for a complete meal.
