Description

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook the chicken for 5-7 minutes on each side until golden and cooked through. Remove and set aside.
  4. In the same skillet, melt butter and sauté onions until soft.
  5. Add garlic and cook for 1 minute.
  6. Add mushrooms and cook until tender and browned, about 5 minutes.
  7. Pour in chicken broth and bring to a simmer.
  8. Stir in heavy cream, Parmesan cheese, and thyme. Simmer until sauce thickens slightly.
  9. Return chicken to the skillet and spoon sauce over the top. Simmer for 2-3 minutes more.
  10. Garnish with fresh parsley and serve hot.
