Description

This Easy Amish Breakfast Casserole is a hearty, comforting dish loaded with eggs, hash browns, bacon, and cheese. It’s perfect for feeding a crowd at breakfast or brunch and can be made ahead of time.


Ingredients

  • 1 pound bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 6 large eggs
  • 4 cups frozen shredded hash browns, thawed
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cottage cheese
  • 1 1/2 cups shredded Swiss cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet, cook bacon until crispy, then remove and crumble. Sauté the chopped onion in the bacon drippings until soft, about 5 minutes.
  3. In a large mixing bowl, whisk the eggs. Stir in hash browns, cheddar cheese, cottage cheese, Swiss cheese, crumbled bacon, sautéed onion, salt, and pepper.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 35–40 minutes or until the top is golden and the center is set.
  6. Let rest for 5–10 minutes before slicing and serving.

Notes

  • You can prepare the casserole the night before and bake in the morning.
  • Feel free to substitute sausage or ham for bacon.
  • Reheats well—great for meal prep or leftovers.
