- 1 pound bacon, cooked and crumbled
- 1 medium onion, chopped
- 6 large eggs
- 4 cups frozen shredded hash browns, thawed
- 2 cups shredded cheddar cheese
- 1 1/2 cups cottage cheese
- 1 1/2 cups shredded Swiss cheese
- Salt and pepper, to taste
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet, cook bacon until crispy, then remove and crumble. Sauté the chopped onion in the bacon drippings until soft, about 5 minutes.
- In a large mixing bowl, whisk the eggs. Stir in hash browns, cheddar cheese, cottage cheese, Swiss cheese, crumbled bacon, sautéed onion, salt, and pepper.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 35–40 minutes or until the top is golden and the center is set.
- Let rest for 5–10 minutes before slicing and serving.
Notes
- You can prepare the casserole the night before and bake in the morning.
- Feel free to substitute sausage or ham for bacon.
