Description

A quick and easy one-pan Greek-inspired meal featuring tender chicken, creamy tzatziki sauce, and fluffy rice baked to perfection.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into chunks
  • 1 cup long-grain white rice, uncooked
  • 1 1/2 cups chicken broth
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced cucumber (optional, for garnish)
  • 1/4 cup chopped fresh parsley (optional, for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a 9×13 inch baking dish, stir together the uncooked rice and chicken broth.
  3. Season the chicken chunks with olive oil, garlic powder, oregano, salt, and pepper, then place evenly over the rice mixture.
  4. Dollop the tzatziki sauce over the chicken and gently spread it to cover.
  5. Cover the dish tightly with foil and bake for 45 minutes.
  6. Remove foil and bake for an additional 10-15 minutes, or until the rice is tender and the chicken is fully cooked.
  7. Let sit for 5 minutes before serving. Garnish with diced cucumber, parsley, and lemon wedges if desired.

Notes

  • Use homemade or high-quality store-bought tzatziki for best flavor.
  • Can substitute brown rice, but increase broth and bake time accordingly.
