- 1 cup long-grain white rice, uncooked
- 1 1/2 cups chicken broth
- 1 cup tzatziki sauce (store-bought or homemade)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced cucumber (optional, for garnish)
- 1/4 cup chopped fresh parsley (optional, for garnish)
- Lemon wedges (optional, for serving)
Instructions
- Preheat oven to 375°F (190°C).
- In a 9×13 inch baking dish, stir together the uncooked rice and chicken broth.
- Season the chicken chunks with olive oil, garlic powder, oregano, salt, and pepper, then place evenly over the rice mixture.
- Dollop the tzatziki sauce over the chicken and gently spread it to cover.
- Cover the dish tightly with foil and bake for 45 minutes.
- Remove foil and bake for an additional 10-15 minutes, or until the rice is tender and the chicken is fully cooked.
- Let sit for 5 minutes before serving. Garnish with diced cucumber, parsley, and lemon wedges if desired.
