Description

This classic Cobb Salad is loaded with fresh ingredients like crispy bacon, grilled chicken, creamy avocado, hard-boiled eggs, and juicy tomatoes, all tossed with a simple homemade dressing. It’s the perfect hearty salad for lunch or dinner!


Ingredients

  • 6 cups chopped romaine lettuce

  • 2 cups grilled chicken breast, diced

  • 4 slices bacon, cooked and crumbled

  • 2 hard-boiled eggs, peeled and chopped

  • 1 avocado, diced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup crumbled blue cheese

  • 1/4 cup red onion, thinly sliced

For the dressing:

  • 1/4 cup olive oil

  • 2 tablespoons red wine vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • Salt and pepper to taste


Instructions

  1. In a large bowl or platter, lay down the chopped romaine lettuce as the base.

  2. Arrange the chicken, bacon, eggs, avocado, cherry tomatoes, blue cheese, and red onion in neat rows on top of the lettuce.

  3. In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper until well combined.

  4. Drizzle the dressing over the salad just before serving, or serve on the side.

  5. Toss gently if desired and enjoy!
