A rich and creamy langostino lobster bisque, perfect for a luxurious starter or a comforting main dish. This decadent soup features sweet langostino meat blended with aromatic vegetables, cream, and a hint of sherry.

- 1 lb langostino tails, cooked and peeled
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1/4 cup tomato paste
- 1/4 cup all-purpose flour
- 4 cups seafood or fish stock
- 1/2 cup dry sherry
- 1 cup heavy cream
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Chopped chives or parsley for garnish
Instructions
- In a large pot, heat butter and olive oil over medium heat.
- Add the diced onion, celery, and garlic. Sauté until softened, about 5-7 minutes.
- Stir in the tomato paste and cook for 2 minutes.
- Sprinkle in the flour and stir to form a roux. Cook for 2 more minutes.
- Gradually whisk in the seafood stock and bring to a simmer.
- Add the sherry, paprika, cayenne, salt, and pepper. Simmer for 15 minutes.
- Use an immersion blender to blend the soup until smooth (or carefully transfer to a blender in batches).
- Return to pot, stir in heavy cream and langostino meat. Simmer for another 5 minutes until heated through.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with chopped chives or parsley.
Notes
- Substitute langostino with lobster or shrimp if desired.
- For a smoother bisque, strain after blending.
- Use homemade seafood stock for richer flavor.
