Description

A rich and creamy langostino lobster bisque, perfect for a luxurious starter or a comforting main dish. This decadent soup features sweet langostino meat blended with aromatic vegetables, cream, and a hint of sherry.

Ingredients

Units Scale
  • 1 lb langostino tails, cooked and peeled
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1/4 cup all-purpose flour
  • 4 cups seafood or fish stock
  • 1/2 cup dry sherry
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Instructions

  1. In a large pot, heat butter and olive oil over medium heat.
  2. Add the diced onion, celery, and garlic. Sauté until softened, about 5-7 minutes.
  3. Stir in the tomato paste and cook for 2 minutes.
  4. Sprinkle in the flour and stir to form a roux. Cook for 2 more minutes.
  5. Gradually whisk in the seafood stock and bring to a simmer.
  6. Add the sherry, paprika, cayenne, salt, and pepper. Simmer for 15 minutes.
  7. Use an immersion blender to blend the soup until smooth (or carefully transfer to a blender in batches).
  8. Return to pot, stir in heavy cream and langostino meat. Simmer for another 5 minutes until heated through.
  9. Taste and adjust seasoning as needed.
  10. Serve hot, garnished with chopped chives or parsley.

Notes

  • Substitute langostino with lobster or shrimp if desired.
  • For a smoother bisque, strain after blending.
  • Use homemade seafood stock for richer flavor.
