Description

A refreshing and light cucumber sandwich made with soft bread, creamy spread, and thinly sliced cucumbers. Perfect for tea time or a light snack.


Ingredients

  • 8 slices of white or whole wheat bread
  • 1 cucumber, thinly sliced
  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp fresh dill, chopped (optional)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Butter (optional, for spreading)

Instructions

  1. In a bowl, mix the softened cream cheese, mayonnaise, dill (if using), salt, and pepper until smooth.
  2. Spread a thin layer of the cream cheese mixture on each slice of bread.
  3. Place a single layer of cucumber slices on half of the bread slices.
  4. Top with the remaining bread slices to form sandwiches.
  5. Trim the crusts off each sandwich for a classic presentation.
  6. Cut each sandwich into halves or quarters, as desired.
  7. Serve immediately or refrigerate until ready to serve.

Notes

  • For extra flavor, add a sprinkle of lemon juice over the cucumbers.
  • Use a mandoline for evenly thin cucumber slices.
  • Sandwiches are best served fresh but can be made a few hours ahead and stored in the fridge covered with a damp paper towel.
