Description

A light and easy crustless quiche packed with vegetables, cheese, and eggs, perfect for a healthy breakfast or brunch.


Ingredients

  • 6 large eggs
  • 1 cup milk (whole or 2%)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 cup chopped spinach (fresh or thawed frozen)
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped onion
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 tbsp olive oil (optional, for sautéing veggies)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
  2. In a skillet over medium heat, add olive oil and sauté onion and bell pepper until softened, about 3-5 minutes.
  3. Add spinach and cook for another 1-2 minutes if using fresh; skip if using thawed frozen spinach.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
  5. Stir in the sautéed vegetables and cheeses.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 35-40 minutes or until the center is set and the top is lightly golden.
  8. Let cool for 5-10 minutes before slicing and serving.

  • You can customize the vegetables and cheese to your preference.
  • Leftovers can be stored in the refrigerator for up to 4 days.
