- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup hot honey
- 6 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 avocado, sliced
- 1/4 cup shredded carrots
- 2 tbsp olive oil (for frying)
Instructions
- Marinate the chicken breasts in buttermilk for at least 30 minutes.
- In a bowl, mix panko breadcrumbs, flour, paprika, garlic powder, salt, and pepper.
- Remove chicken from buttermilk and coat thoroughly in breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through, about 4-5 minutes per side.
- Drizzle cooked chicken with hot honey and let rest for 5 minutes.
- In a large bowl, combine salad greens, cherry tomatoes, red onion, avocado, and shredded carrots.
- Slice the hot honey chicken and place on top of the salad.
- Serve immediately with your favorite dressing if desired.
Notes
- You can use store-bought hot honey or make your own by mixing honey with hot sauce or chili flakes.
- Air fryer can be used instead of pan-frying for a healthier option.
- Adjust spice level of hot honey according to preference.
