- 1 lb boneless, skinless chicken breasts
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (15 oz) can white beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (4 oz) can diced green chilies
- 2 cups chicken broth
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper (optional)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- Juice of 1 lime (optional)
- Fresh cilantro, chopped (for garnish)
Instructions
- Place chicken breasts in the bottom of the crockpot.
- Add diced onion, garlic, white beans, corn, green chilies, and chicken broth.
- Season with cumin, oregano, chili powder, cayenne pepper, salt, and black pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once chicken is cooked, remove from crockpot, shred with two forks, and return to the pot.
- Add cream cheese and sour cream to the crockpot. Stir until melted and well combined.
- Let the chili cook for an additional 10-15 minutes to heat through.
- Stir in lime juice if using, garnish with chopped cilantro, and serve warm.
Notes
- Use rotisserie chicken for a quicker version—just reduce cook time.
- Adjust spice level by reducing or omitting cayenne pepper.
- Serve with tortilla chips, shredded cheese, or avocado for added flavor.
