Description

A flavorful and easy one-pot meal made with ground beef, taco seasoning, and spaghetti noodles cooked in a crockpot for a comforting twist on taco night.

Ingredients

Units Scale
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth
  • 8 oz uncooked spaghetti
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef, chopped onion, and bell pepper. Cook until beef is browned. Drain excess fat.
  2. Add taco seasoning and mix well. Cook for another 2 minutes.
  3. Transfer the beef mixture to the crockpot. Add diced tomatoes with green chilies, tomato sauce, and beef broth. Stir to combine.
  4. Break spaghetti in half and add to the crockpot, stirring to submerge the noodles in the liquid.
  5. Cover and cook on low for 3-4 hours or until spaghetti is tender, stirring once or twice during cooking.
  6. Sprinkle shredded cheddar cheese on top and cover until melted, about 5-10 minutes.
  7. Serve hot with desired toppings.

Notes

  • Stirring once or twice during cooking helps prevent the noodles from clumping.
  • You can substitute ground turkey or chicken for a leaner option.
  • Add black beans or corn for extra texture and flavor.
