Description

This Crockpot Pierogi Casserole with Sausage is the ultimate comfort food dinner. With layers of cheesy pierogies, smoky sausage, and a creamy sauce, this dish is easy to throw together and perfect for busy weeknights. Just set it and forget it—your slow cooker does all the work!


Ingredients

  • 1 (16 oz) package frozen potato and cheese pierogies

  • 1 lb smoked kielbasa sausage, sliced into rounds

  • 1 cup shredded cheddar cheese

  • 1 (8 oz) block cream cheese, softened

  • 1/2 cup sour cream

  • 1/2 cup chicken broth

  • 1 small onion, diced

  • 1/2 tsp garlic powder

  • 1/4 tsp black pepper

  • 1 tbsp butter

  • Fresh parsley (optional, for garnish)


Instructions

  1. Spray the inside of your crockpot with nonstick spray.

  2. In a medium pan over medium heat, melt the butter and sauté the diced onion until soft, about 3–4 minutes.

  3. In a bowl, whisk together cream cheese, sour cream, chicken broth, garlic powder, and black pepper until smooth.

  4. Layer half of the frozen pierogies in the crockpot.

  5. Add half of the sliced sausage and half of the sautéed onions.

  6. Spoon half of the creamy sauce over the layer.

  7. Repeat the layers with the remaining pierogies, sausage, onions, and sauce.

  8. Sprinkle shredded cheddar cheese evenly on top.

  9. Cover and cook on low for 4–5 hours or high for 2–3 hours, until heated through and bubbly.

  10. Garnish with chopped parsley before serving, if desired.


Notes

  • You can use turkey sausage or chicken sausage for a lighter version.

  • Feel free to add a handful of baby spinach in the middle layers for extra veggies.

  • Works great with homemade pierogies too!
