Crockpot Loaded Steak and Potato Bake is a hearty, slow-cooked meal made with tender steak pieces, seasoned potatoes, cheese, and bacon, perfect for a comforting dinner with minimal effort.

- 1.5 lbs sirloin steak, cut into bite-sized pieces
- 4 medium russet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 1/2 cups shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- 1/2 cup sour cream (for serving)
- 2 green onions, sliced (for garnish)
- 1/4 cup water or beef broth
Instructions
- In a large bowl, toss diced potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Layer half of the seasoned potatoes in the bottom of a greased crockpot.
- Add half of the steak pieces on top, then sprinkle with 1/2 cup of cheese and half of the crumbled bacon.
- Repeat layers with remaining potatoes, steak, cheese, and bacon. Pour water or beef broth evenly over the top.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until potatoes are tender and steak is cooked through.
- During the last 10 minutes, sprinkle the remaining 1/2 cup of cheese over the top and cover until melted.
- Serve warm, topped with sour cream and green onions.
Notes
- Use baby potatoes with skin on for added texture and easier prep.
- Swap cheddar with a cheese blend or pepper jack for more kick.
- Add bell peppers or mushrooms for a veggie boost.
