- 1 lb smoked kielbasa, sliced into rounds
- 1 lb fresh green beans, trimmed
- 1 lb baby potatoes, halved
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
Instructions
- In a large skillet, heat olive oil over medium heat. Add kielbasa slices and cook until lightly browned. Transfer to the crockpot.
- Add green beans, baby potatoes, chopped onion, and minced garlic to the crockpot.
- Sprinkle salt, pepper, and smoked paprika over the ingredients.
- Pour chicken broth over everything and stir gently to combine.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes and green beans are tender.
- Stir before serving and adjust seasoning if necessary.
Notes
- You can use canned green beans if fresh are not available, but add them in the last hour of cooking.
- For extra flavor, add a dash of hot sauce or red pepper flakes.
- This recipe can be doubled for larger crowds.
