Crispy Roasted Chickpeas are a healthy, protein-rich snack that’s easy to make and endlessly customizable with your favorite spices.
Ingredients

- 1 can chickpeas (or 1.5 cups cooked chickpeas)
- 1–2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika (smoked or sweet)
- Optional: 1/4 tsp cumin, chili powder, curry powder, cayenne, to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Drain and rinse chickpeas thoroughly. Pat dry with paper towels and remove any loose skins.
- Spread chickpeas in a single layer on the baking sheet and roast for 20 minutes.
- Remove from oven, drizzle with olive oil, and season with salt, pepper, garlic powder, paprika, and optional spices. Toss to coat evenly.
- Return to oven and roast for another 15–20 minutes, shaking pan halfway through, until crispy and golden.
- Let cool completely before storing or serving.
Notes
- For a cheesy flavor, add nutritional yeast.
- Try cinnamon and sugar for a sweet version.
- Enhance with lemon zest and thyme for a Mediterranean twist.
- Store in an airtight container with a paper towel to maintain crispness.
- To re-crisp, bake at 350°F (175°C) for 5–7 minutes.
