Description

Crispy Roasted Chickpeas are a healthy, protein-rich snack that’s easy to make and endlessly customizable with your favorite spices.

Ingredients

Scale
  • 1 can chickpeas (or 1.5 cups cooked chickpeas)
  • 12 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika (smoked or sweet)
  • Optional: 1/4 tsp cumin, chili powder, curry powder, cayenne, to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Drain and rinse chickpeas thoroughly. Pat dry with paper towels and remove any loose skins.
  3. Spread chickpeas in a single layer on the baking sheet and roast for 20 minutes.
  4. Remove from oven, drizzle with olive oil, and season with salt, pepper, garlic powder, paprika, and optional spices. Toss to coat evenly.
  5. Return to oven and roast for another 15–20 minutes, shaking pan halfway through, until crispy and golden.
  6. Let cool completely before storing or serving.

Notes

  • For a cheesy flavor, add nutritional yeast.
  • Try cinnamon and sugar for a sweet version.
  • Enhance with lemon zest and thyme for a Mediterranean twist.
  • Store in an airtight container with a paper towel to maintain crispness.
  • To re-crisp, bake at 350°F (175°C) for 5–7 minutes.
