Description

These crispy parmesan zucchini rounds are the perfect quick snack or side dish. With just a handful of ingredients and minimal prep, they bake up golden and flavorful with a cheesy crunch on the outside and tender zucchini inside. Great for dipping or enjoying on their own!


Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds

  • 1/2 cup grated Parmesan cheese

  • 1 tablespoon olive oil

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon salt

  • Optional: chopped parsley for garnish


Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. In a large bowl, toss the zucchini rounds with olive oil, garlic powder, salt, and pepper until evenly coated.

  3. Arrange the zucchini slices in a single layer on the prepared baking sheet.

  4. Sprinkle each round with a generous pinch of grated Parmesan cheese.

  5. Bake for 20-25 minutes, or until the cheese is golden and the zucchini is tender with crispy edges.
