Description

These crispy Parmesan zucchini rounds are a quick and easy snack or side dish. Sliced zucchini is coated in Parmesan cheese and baked to golden, crispy perfection. They’re low-carb, flavorful, and ready in under 30 minutes — perfect for a healthy appetizer or veggie side.


Ingredients

  • 2 medium zucchini, sliced into 1/4-inch rounds

  • 1/2 cup grated Parmesan cheese

  • 1 tablespoon olive oil

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • Optional: chopped parsley for garnish


Instructions

 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a bowl, toss the zucchini rounds with olive oil, garlic powder, salt, and pepper.

  3. Arrange the zucchini slices in a single layer on the baking sheet.

  4. Sprinkle a generous amount of Parmesan cheese on top of each slice.

  5. Bake for 20–22 minutes, or until the cheese is golden and the zucchini is tender with crispy edges.

  6. Remove from oven and let cool slightly. Garnish with fresh parsley if desired.

  7. Serve warm and enjoy!


Notes

  • Try using Italian seasoning or chili flakes for extra flavor.

  • This recipe works great in the air fryer too—cook at 400°F for about 8–10 minutes.
