Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 cup buttermilk
- 1 tsp hot sauce
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
- Vegetable oil, for frying
- 8 slider buns
- 1 cup coleslaw mix
- 1/4 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tsp sugar
- Pickles (optional)
Instructions
- Cut chicken thighs into slider-sized pieces and marinate in buttermilk and hot sauce for at least 1 hour.
- In a large bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
- Heat oil in a deep fryer or large skillet to 350°F (175°C).
- Remove chicken from marinade, dredge in flour mixture, and press to adhere coating.
- Fry chicken in batches until golden brown and cooked through, about 5–7 minutes per side. Drain on paper towels.
- In a bowl, mix coleslaw, mayonnaise, apple cider vinegar, and sugar to make the slaw. Season to taste.
- Toast slider buns if desired, then assemble: bottom bun, fried chicken, slaw, pickles (if using), top bun.
- Serve immediately while hot and crispy.
Notes
- Marinating the chicken overnight enhances flavor and tenderness.
- Double dredging can make the chicken extra crispy.
- Adjust spice level by modifying the cayenne and hot sauce amounts.
