Description

Creamy Tuscan Chicken Pasta is a rich and flavorful dish featuring tender chicken, sun-dried tomatoes, spinach, and pasta in a creamy garlic parmesan sauce.


Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, sliced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine or penne pasta
  • 1/2 cup reserved pasta water
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with Italian seasoning, salt, and pepper.
  3. Cook chicken for 5-6 minutes or until golden and cooked through. Remove and set aside.
  4. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  5. Add spinach and cook until wilted, about 2 minutes.
  6. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and cook until melted and creamy.
  7. Return cooked chicken to the skillet and stir to combine.
  8. Add cooked pasta and reserved pasta water to the skillet. Toss everything together until well coated.
  9. Simmer for 1-2 minutes until the sauce thickens and clings to the pasta.
  10. Garnish with fresh basil or parsley if desired and serve warm.

Notes

  • Use freshly grated Parmesan for the best flavor and texture.
  • Adjust the sauce thickness with more or less reserved pasta water.
  • Can be made with gluten-free pasta for a gluten-free option.
