- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup canned crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add garlic and cook for 1 minute until fragrant.
- Add cherry tomatoes and crushed tomatoes. Simmer for 5 minutes, allowing the sauce to thicken slightly.
- Reduce heat to low and stir in heavy cream and Parmesan cheese until combined.
- Return the chicken to the skillet and simmer for an additional 5 minutes, spooning the sauce over the chicken.
- Stir in fresh basil and serve hot.

- Use sun-dried tomatoes for a deeper flavor variation.
- Fresh basil adds the best flavor, but dried basil can be used in a pinch.
