- 1 lb Italian sausage
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 (9 oz) package refrigerated cheese tortellini
- 2 cups fresh spinach
- 1 cup heavy cream
- Salt and pepper to taste
- Freshly grated Parmesan cheese, for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned. Remove excess grease if necessary.
- Add diced onion and cook until softened, about 5 minutes. Stir in garlic, Italian seasoning, and red pepper flakes.
- Pour in chicken broth and diced tomatoes. Bring to a boil.
- Add cheese tortellini and cook according to package instructions, usually 4-6 minutes.
- Reduce heat to low. Stir in spinach and heavy cream. Simmer for a few more minutes until spinach is wilted and soup is heated through.
- Season with salt and pepper to taste. Serve hot, garnished with Parmesan cheese if desired.
Notes
- Use spicy or mild sausage depending on your preference.
- Frozen tortellini can be used, just adjust cooking time accordingly.
- Substitute kale or Swiss chard for spinach if preferred.
