Description

A rich and hearty soup featuring cheese tortellini, savory sausage, and a creamy broth—perfect for a cozy meal.


Ingredients

  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 (9 oz) package refrigerated cheese tortellini
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned. Remove excess grease if necessary.
  2. Add diced onion and cook until softened, about 5 minutes. Stir in garlic, Italian seasoning, and red pepper flakes.
  3. Pour in chicken broth and diced tomatoes. Bring to a boil.
  4. Add cheese tortellini and cook according to package instructions, usually 4-6 minutes.
  5. Reduce heat to low. Stir in spinach and heavy cream. Simmer for a few more minutes until spinach is wilted and soup is heated through.
  6. Season with salt and pepper to taste. Serve hot, garnished with Parmesan cheese if desired.

Notes

  • Use spicy or mild sausage depending on your preference.
  • Frozen tortellini can be used, just adjust cooking time accordingly.
  • Substitute kale or Swiss chard for spinach if preferred.
