- 8 oz pasta (penne or rigatoni)
- 1 lb Italian sausage (casings removed)
- 1 tablespoon olive oil
- 3 cloves garlic (minced)
- 1/2 cup onion (diced)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 cups spinach (optional)
- Fresh parsley (for garnish)
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into small pieces.
- Add onion and garlic to the skillet and sauté until softened.
- Stir in chicken broth and heavy cream. Bring to a simmer.
- Add Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until cheese melts and sauce thickens slightly.
- Add cooked pasta and spinach (if using) to the skillet. Toss to coat in the sauce.
- Season with salt and pepper to taste. Cook for 2-3 more minutes until everything is heated through.
- Garnish with fresh parsley before serving.
Notes
- Use spicy sausage for an extra kick.
- Substitute spinach with kale or arugula if preferred.
- Reserve some pasta water to thin the sauce if needed.
- Top with extra Parmesan for more flavor.
