- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup basil pesto
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1 tablespoon butter
- Fresh basil leaves for garnish (optional)
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium heat.
- Cook chicken breasts for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, melt butter and add chicken broth to deglaze the pan.
- Add heavy cream and pesto, stirring to combine.
- Mix in the Parmesan cheese and cook until the sauce thickens slightly.
- Return the chicken breasts to the skillet, spooning the sauce over them.
- Simmer for 3-5 minutes until everything is heated through.
- Garnish with fresh basil leaves before serving.
