  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 2 cups chopped spinach or kale
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Remove excess fat if needed.
  2. Add onion and garlic; sauté for 2–3 minutes until fragrant.
  3. Stir in carrots and celery, and cook for another 5 minutes until slightly softened.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10–15 minutes.
