Ingredients

  • 1 lb Italian sausage (mild or spicy, based on preference)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 potato, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon ground black pepper
  • Fresh parsley, chopped (optional, for garnish)
  • 1 cup spinach or kale (optional, for extra greens)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through. Remove the sausage and set aside, leaving a little drippings in the pot.
  2. Add the onion, garlic, carrots, celery, and potato to the same pot and cook for 5-7 minutes, until the vegetables start to soften.
  3. Return the cooked sausage to the pot and stir in the chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes, until the vegetables are tender.
  4. Stir in the heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Let the soup simmer for an additional 5 minutes, allowing the flavors to meld together.
  5. If adding spinach or kale, stir it in during the last 2-3 minutes of cooking until wilted.
  6. Serve hot, garnished with fresh parsley and extra Parmesan if desired.

Notes

  • This soup can be stored in the refrigerator for up to 3 days and also freezes well for up to 3 months.
  • For a lighter version, substitute the heavy cream with half-and-half or milk.
  • Feel free to swap the sausage for ground turkey or chicken for a leaner option.
