Ingredients
Scale
- 3–4 fresh oranges (zested and juiced)
- 3 large eggs
- 1/2 cup granulated sugar
- 1 cup whole milk
- 1/2 cup heavy cream
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 325°F (160°C).
- In a saucepan, combine orange juice, zest, sugar, and a pinch of salt. Warm gently over medium heat.
- In a separate bowl, whisk eggs and cornstarch until smooth.
- Slowly pour warm orange mixture into the egg mixture while whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens to a custard-like consistency.
- Remove from heat and stir in vanilla extract and heavy cream.
- Pour custard into ramekins or a baking dish.
- Place ramekins in a water bath by setting them in a baking dish filled with hot water.
- Bake for 30–35 minutes until just set but slightly wobbly in the center.
- Cool to room temperature, then refrigerate for at least 2 hours before serving.
Notes
- Use blood orange juice for a deeper color and flavor.
- Add a splash of Grand Marnier for a boozy twist.
- Top with caramelized orange slices or whipped cream for garnish.
- For a spiced version, infuse the milk with a cinnamon stick before combining.
