Description

A silky, citrus-infused custard that balances fresh orange flavor with creamy richness, perfect for any season.


Ingredients

Scale
  • 34 fresh oranges (zested and juiced)
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan, combine orange juice, zest, sugar, and a pinch of salt. Warm gently over medium heat.
  3. In a separate bowl, whisk eggs and cornstarch until smooth.
  4. Slowly pour warm orange mixture into the egg mixture while whisking constantly to temper the eggs.
  5. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens to a custard-like consistency.
  6. Remove from heat and stir in vanilla extract and heavy cream.
  7. Pour custard into ramekins or a baking dish.
  8. Place ramekins in a water bath by setting them in a baking dish filled with hot water.
  9. Bake for 30–35 minutes until just set but slightly wobbly in the center.
  10. Cool to room temperature, then refrigerate for at least 2 hours before serving.

Notes

  • Use blood orange juice for a deeper color and flavor.
  • Add a splash of Grand Marnier for a boozy twist.
  • Top with caramelized orange slices or whipped cream for garnish.
  • For a spiced version, infuse the milk with a cinnamon stick before combining.
