- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- 8 oz cremini or white mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup shredded Asiago cheese
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add chicken and sear 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium and add butter. Sauté mushrooms until browned and tender, about 5 minutes.
- Add garlic and thyme, cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream. Stir and bring to a simmer.
- Add Asiago cheese and stir until melted and the sauce is smooth and slightly thickened, 3–5 minutes.
- Return chicken to the skillet, spoon sauce over the top, and simmer for 2–3 minutes to heat through.
- Garnish with fresh parsley and serve hot.

- Pair with mashed potatoes, pasta, or crusty bread to soak up the sauce.
- Use freshly grated Asiago for best flavor and meltability.
- Substitute Asiago with Parmesan if preferred.
