- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cups sliced mushrooms (cremini or button)
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 3/4 cup grated Asiago cheese
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add butter and sauté mushrooms until browned and tender, about 5 minutes.
- Add garlic and cook for another minute.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the skillet.
- Stir in heavy cream, Asiago cheese, and thyme. Cook until cheese is melted and sauce is slightly thickened, about 3-4 minutes.
- Return chicken to the skillet and spoon sauce over the top. Simmer for another 2-3 minutes to reheat chicken.
- Garnish with chopped parsley and serve warm.

- Substitute Asiago with Parmesan if desired.
- Serve with pasta, rice, or mashed potatoes to soak up the sauce.
