- 1 cup orzo pasta
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp crushed red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until translucent, about 3-4 minutes.
- Add minced garlic and cook for another 30 seconds.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Season with salt, pepper, paprika, oregano, and red pepper flakes if using.
- Stir in the orzo and cook for 1-2 minutes to toast slightly.
- Pour in beef broth and milk, stir well, and bring to a simmer.
- Reduce heat to low, cover, and cook for about 10-12 minutes until orzo is tender, stirring occasionally.
- Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
- Garnish with chopped parsley before serving.
