Ingredients

12 oz spaghetti or fettuccine

2 tablespoons olive oil

6 cloves garlic, minced

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup heavy cream

1 cup grated Parmesan cheese

Salt, to taste

Black pepper, to taste

Fresh parsley, chopped (optional, for garnish)
Instructions

Cook pasta according to package instructions. Reserve ½ cup pasta water, then drain and set aside.

In a large skillet over medium heat, heat olive oil and add the minced garlic. Sauté for 1–2 minutes until fragrant, but not browned.

Add butter and stir until melted.

Sprinkle in flour and whisk constantly for 1–2 minutes to create a roux.

Slowly whisk in milk and heavy cream. Cook for 4–5 minutes, stirring often, until the sauce thickens.

Stir in Parmesan cheese, salt, and black pepper. Mix until smooth.

Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add a splash of the reserved pasta water.

Garnish with fresh parsley if desired. Serve warm.
