Description

This creamy garlic pasta is rich, comforting, and easy to make in under 30 minutes. With a luscious garlic cream sauce, this dish is perfect for weeknight dinners or as a base for your favorite proteins and veggies.


Ingredients

  • 12 oz spaghetti or fettuccine

  • 2 tablespoons olive oil

  • 6 cloves garlic, minced

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 2 cups whole milk

  • 1 cup heavy cream

  • 1 cup grated Parmesan cheese

  • Salt, to taste

  • Black pepper, to taste

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Cook pasta according to package instructions. Reserve ½ cup pasta water, then drain and set aside.

  2. In a large skillet over medium heat, heat olive oil and add the minced garlic. Sauté for 1–2 minutes until fragrant, but not browned.

  3. Add butter and stir until melted.

  4. Sprinkle in flour and whisk constantly for 1–2 minutes to create a roux.

  5. Slowly whisk in milk and heavy cream. Cook for 4–5 minutes, stirring often, until the sauce thickens.

  6. Stir in Parmesan cheese, salt, and black pepper. Mix until smooth.

  7. Add the cooked pasta to the skillet and toss to coat. If the sauce is too thick, add a splash of the reserved pasta water.

  8. Garnish with fresh parsley if desired. Serve warm.


Notes

  • You can add cooked chicken, shrimp, or sautéed vegetables for extra protein and texture.

  • For a lighter version, substitute half-and-half for the heavy cream.

  • Use freshly grated Parmesan for the best flavor and texture.
