Description

A bold and tangy Mediterranean-inspired dressing made with feta, Greek yogurt, garlic, and lemon. Perfect for salads, grain bowls, or as a dip.


Ingredients

  • 1/2 cup crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 tablespoon white wine vinegar
  • Water, as needed to thin
  • Freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh dill or parsley (optional)

Instructions

  1. Add the feta cheese, Greek yogurt, lemon juice, olive oil, garlic, and white wine vinegar to a blender or food processor.
  2. Blend until smooth and creamy.
  3. Add water a splash at a time to reach the desired consistency, blending between additions.
  4. Season with freshly ground black pepper and stir in fresh herbs if using.
  5. Transfer to a container and refrigerate for at least 30 minutes to allow flavors to meld.

Notes

  • Add honey for a sweet balance.
  • Use sour cream instead of yogurt for a richer taste.
  • Add oregano, basil, or crushed red pepper for variation.
