Description

Creamy Chicken Pesto Lasagna Roll Ups are a delicious twist on traditional lasagna, featuring tender chicken, rich pesto, and a creamy cheese sauce rolled in lasagna noodles.


Ingredients

  • 8 lasagna noodles
  • 2 cups cooked shredded chicken
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 cup pesto sauce
  • 1 egg
  • 2 cups Alfredo sauce
  • Salt and pepper to taste
  • Chopped fresh basil (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions. Drain and lay flat on parchment paper.
  2. In a mixing bowl, combine shredded chicken, ricotta cheese, 1/2 cup mozzarella, Parmesan, pesto, egg, salt, and pepper. Mix well.
  3. Spread 2 tablespoons of chicken mixture on each lasagna noodle, then roll up tightly.
  4. Spread 1 cup of Alfredo sauce on the bottom of a 9×13 inch baking dish. Place roll ups seam side down in the dish.
  5. Top with remaining Alfredo sauce and sprinkle remaining mozzarella cheese over the top.
  6. Cover with foil and bake for 20 minutes. Uncover and bake for an additional 10 minutes, or until bubbly and golden.
  7. Garnish with chopped basil if desired and serve warm.

Notes

  • You can substitute rotisserie chicken for convenience.
  • Use homemade or store-bought pesto and Alfredo sauce.
  • For a lighter version, use low-fat cheeses and sauces.
