Creamy Chicken Pesto Lasagna Roll Ups are a delicious twist on traditional lasagna, featuring tender chicken, rich pesto, and a creamy cheese sauce rolled in lasagna noodles.

- 8 lasagna noodles
- 2 cups cooked shredded chicken
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 cup pesto sauce
- 1 egg
- 2 cups Alfredo sauce
- Salt and pepper to taste
- Chopped fresh basil (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions. Drain and lay flat on parchment paper.
- In a mixing bowl, combine shredded chicken, ricotta cheese, 1/2 cup mozzarella, Parmesan, pesto, egg, salt, and pepper. Mix well.
- Spread 2 tablespoons of chicken mixture on each lasagna noodle, then roll up tightly.
- Spread 1 cup of Alfredo sauce on the bottom of a 9×13 inch baking dish. Place roll ups seam side down in the dish.
- Top with remaining Alfredo sauce and sprinkle remaining mozzarella cheese over the top.
- Cover with foil and bake for 20 minutes. Uncover and bake for an additional 10 minutes, or until bubbly and golden.
- Garnish with chopped basil if desired and serve warm.
Notes
- You can substitute rotisserie chicken for convenience.
- Use homemade or store-bought pesto and Alfredo sauce.
- For a lighter version, use low-fat cheeses and sauces.
