Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into strips
- Salt and pepper to taste
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper, then add to the skillet. Cook until golden and cooked through, about 5-6 minutes. Remove and set aside.
- In the same skillet, add garlic and mushrooms. Sauté for about 4-5 minutes until mushrooms are soft.
- Add spinach and cook until wilted, about 1-2 minutes.
- Lower the heat and pour in the heavy cream. Stir in Parmesan cheese, Italian seasoning, and red pepper flakes.
- Simmer the sauce for 2-3 minutes until slightly thickened.
- Return the cooked chicken to the skillet and coat with the sauce. Simmer for another 2-3 minutes.
- Serve hot with your choice of side.
