- 2 tablespoons olive oil
- 2 chicken breasts, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 8 oz fettuccine or pasta of choice
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- Chopped fresh parsley, for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through. Remove from pan and set aside.
- In the same skillet, add butter and garlic. Sauté for about 1 minute until fragrant.
- Stir in flour and cook for 1-2 minutes to form a roux.
- Gradually whisk in chicken broth and heavy cream. Cook for 3-4 minutes until the sauce begins to thicken.
- Add Parmesan cheese, Italian seasoning, and red pepper flakes if using. Stir until cheese is melted and sauce is smooth.
- Return cooked chicken to the skillet and stir to coat in the sauce.
- Add the cooked pasta and toss until well combined and coated with the sauce.
- Garnish with chopped parsley and serve warm.
Notes
- Use freshly grated Parmesan for the best flavor and texture.
- You can substitute half-and-half for a lighter sauce.
- Great with a side of garlic bread or steamed vegetables.
