Description

Creamy Chicken Casserole is a comforting and hearty baked dish made with tender chicken, a rich creamy sauce, vegetables, and topped with a crunchy topping. Perfect for a family dinner or meal prep.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup crushed Ritz crackers or breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
  3. Stir in the cooked chicken, mixed vegetables, and half of the shredded cheese.
  4. Spread the mixture evenly into a greased 9×13-inch baking dish.
  5. Sprinkle the remaining cheese on top.
  6. In a small bowl, mix the crushed crackers or breadcrumbs with melted butter and sprinkle over the casserole.
  7. Bake for 25–30 minutes or until the casserole is hot and bubbly and the topping is golden brown.
  8. Let rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken to save time.
  • Substitute cream of mushroom or cream of celery soup for variation.
  • Can be made ahead and stored in the fridge for up to 2 days before baking.
